Grilling and summer go hand in hand. As a new single Mom, it took me over a year to brave using my grill. I expected grilling to be a difficult way to prepare dinner. However I’ve learned that grilling is not difficult. It fact it’s a very pleasant way to cook a meal when the weather is beautiful outside!

This week I grilled a delicious Roasted Garlic & Cracked Black Peppercorn Marinated Fresh Pork Tenderloin while also making a grilled pineapple salsa. The meal was absolutely delicious and so simple to prepare. I had dinner from the grill to the table in less than 30 minutes!

Since Smithfield Marinated Fresh Pork is slow-marinated and perfectly seasoned in the bag, there is no prep work for the meat. Simply preheat your grill to about 350 degrees and place the already marinated pork tenderloin on the grate. Shut the lid and allow the meat to cook on one side for 3 to 5 minutes.

While the meat cooks on the first side, prepare the pineapple, red pepper, Roma tomatoes, and jalapeno for the grill. To prepare the pineapple: slice the top and bottom off of the pineapple, then stand the pineapple up to slice off the tough outer skin, next cut the pineapple into 1 inch thick rounds. Slice the tomatoes and peppers in half, then remove the inside seeds.

Open the grill and flip the pork lion so the uncooked side is against the grill grate. Lay the pineapple, tomatoes, and peppers on the grill grate, grilling for about 4 minutes over medium-low flames.

While waiting to turn the food on the grill, chop the red onion and cilantro.

Flip the pineapple, peppers, and tomatoes to the other side, grilling for another 4 minutes.

Remove the pineapple, peppers, and tomatoes to a cutting board. Roughly chop them into small pieces. While chopping the pineapple, discard the core. If you prefer less chunky salsa, use a blender or food processor to finely chop the ingredients.

Place the chopped pineapple, tomatoes, and peppers into a bowl.

Add the diced onion and cilantro. Squeeze the juice of one lime into the bowl, add 1/4 teaspoon of cumin, and add salt & pepper to taste. Stir. 

Serve the grilled pork and grilled pineapple salsa with cilantro lime rice and tortilla chips for a delicious and beautiful summer meal. To make cilantro lime rice simply make rice while grilling the rest of the meal. Just before serving the rice, add the juice of a lime and 1/4 cup chopped cilantro.
