When the weather is beautiful and friends are gathered together, who wants to be stuck alone in a hot kitchen? Not me!

Quick and easy side dishes are my favorite in the summer. When I’m entertaining friends, or running out the door to a potluck summer gathering I need something delicious, easy, and fast. Bonus points if I don’t have to heat up the kitchen with the oven.

Last week I created this easy Black Bean Cilantro Pasta Salad. Not only was it delicious, but I whipped it together in less than 15 minutes without turning on my oven at all! This easy recipe will definitely be my go-to potluck dish all summer long.

Black Bean Cilantro Pasta Salad

Ingredients:

  • Barilla Ready Pasta
  • avocado
  • black beans
  • chick peas
  • corn
  • red pepper
  • cherry or grape tomatoes
  • lime
  • cilantro

Directions:

Cook one bag of Barilla Ready Pasta in the microwave, following the directions on the back of the bag. Pour the cooked pasta into a bowl.

Add 1 cup of rinsed and drained black beans, and 1/2 cup rinsed and drained chick peas.

Add 1/2 cup each drained corn kernels and diced red pepper.

Cube one ripe avocado, then squeeze the juice from 1/2 a lime on top of the avocado. Toss to coat.

Add the avocado and 1/2 cup cherry or grape tomatoes to the top of the pasta salad.

Add 1/4 cup chopped cilantro and stir.

Ingredients

  • 1 pouch Barilla Ready Pasta
  • 1 avocado
  • 1 cup black beans
  • 1/2 cup chick peas

  • 1/2 cup cherry or grape tomatoes
  • 1 lime
  • 1/4 cup cilantro
