Nearly without fail my favorite holiday memories take place in the kitchen- whether at my childhood home, or at my grandmothers’ homes. No memory gives me warm fuzzy feelings like the thoughts of those crowded kitchens, with every available chair squeezed around the tables- the hum of the adults’ voices from the big table as my cousins and I sat nearby at the kid’s table, our plates piled high with tasty dishes.

Now as a mom, I want to create those same memories of holiday meals for my children, but it is difficult to get a great meal on the table with an into-everything-toddler at my feet! Let’s face it, getting a holiday meal to the table is nearly impossible.

Not only do I want to create great holiday meal memories for my children, but I also want to enjoy the moments during those meals. If I’m stuck in the kitchen putting together an elaborate meal, or still stressed at dinner time from the prep and cooking, how happy will those memories be?

When I’m chasing a toddler while trying to prepare a memory-making holiday meal, quick and easy is a must!

One great, delicious, and easy holiday dish is Salsa Cilantro Julienne Potato Bake.

Even better, this Salsa Cilantro Julienne Potato Bake can be made ahead- like during morning nap- and popped in the oven to bake right before dinner time.Cilantro Salsa Potato Bake

Salsa Cilantro Julienne Potato Bake

Ingredients:

  • One box of Betty Crocker™ Julienne Potatoes
  • 2 cups water
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/2 cup shredded Monterey Jack cheese
  • 3 tablespoons freshly chopped cilantro

Directions:

Preheat the oven to 450 degrees.

Bring 2 cups of water to a boil.

In a 1.5 quart casserole dish, whisk the sauce packet with the boiling water, sour cream, salsa, 1/4 cup of Monterey Jack cheese, and 2 tablespoons of the chopped cilantro. Stirin the bag of Julienne potatoes. Garnish the top of the casserole with the remaining 1/4 cup of Monterey Jack cheese and 1 tablespoon of chopped cilantro.

  4. I would try the sausage cheese balls. The last recipe that I had for them turned out …well lets just say the dog wouldn’t even eat them.
