Thanksgiving is just behind, and Christmas is barreling down on us. Looking at my calendar I cannot believe how few days I have to pack in everything before December 25th! Between parties, shopping, family gatherings, homeschool events, and a Christmas play, our calendar is packed tight. Not to mention the crafting and baking I hope to fit in with my crew! My poor two-year old is still using the dog’s stocking because I haven’t yet quilted his. I have to fit sewing in there too!Rosemary Olive Oil Bread

With the busyness of the season, I struggle with getting dinner on the table. Truthfully, I’d rather do other things than cook a meal this time of year. Finding meals that are delicious yet easy is my number one goal with meal planning. I don’t want to stress over a difficult or time-consuming meal, because the most important thing is spending my time with my kids, not alone cooking in the kitchen!

One meal sure to please both my family and my goal of no-stress cooking is a frozen lasagna. Just add a fresh-baked loaf of delicious Rosemary Olive Oil bread for a perfectly yummy meal. Rosemary Bread is a family favorite at my house.

Don’t run away now. I know the thought of homemade bread can send a Momma running, expecting a difficult recipe ahead. This is not one of those times, I promise!

Rosemary Olive Oil Bread

Ingredients

  • 1 cup water
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2.5 cups flour
  • 1 teaspoon italian seasoning
  • 2 teaspoons dried rosemary
  • 1 teaspoon yeast

Instructions

  1. Put the water and olive oil in the bread maker.
  2. Add salt and sugar.
  3. Next dump in the flour.
  4. Top with spices, then add yeast.
  5. Set the bread machine on the dough cycle.
  6. Spray two pie pans with cooking oil spray.
  7. When the dough cycle ends, gently shape the bread dough into a ball and place it in the pan to rise.
  8. Place the pan in a warm location and allow to rise until doubled in size. (45 minutes to an hour)
  9. Once risen, bake the bread for 30 minutes in a 375 degree oven.

Now for the secret of perfectly shaped round bread loaves!

Use a disposable tin pie pan to shape the loaf! I always have tin pie pans leftover during the holiday season, and I bet you do too! If not, just wash a pie pan and save it after serving your next pie!

Spray the pie pan with cooking oil spray. Gently shape the bread dough into a ball and place it in the pan to rise.Rosemary Olive Oil Bread

Place the pan in a warm location and allow to rise until doubled in size. Don’t rush it, the dough should really fill the pan! My dough typically takes about 45 minutes to an hour for rising.

Notice how my shaped loaf wasn’t perfect, and didn’t sit perfectly in the middle of my pie pan? The pie pan’s shape forced the dough into a perfect mound as it rose.Rosemary Olive Oil Bread

Once risen, bake the bread for 30 minutes in a 375 degree oven.
