Halloween Dessert – Rice Krispie Eyeballs

Themed Halloween desserts are always so much fun. My kids are really into Rice Krispie treats right now, so we definitely have to make these fun Rice Krispie Eyeballs again this year.

These adorable and simple Rice Krispie Eyeballs are perfect whether you are having a Halloween party, or simply making this fun halloween dessert to celebrate the season with your kids.

How to make Rice Krispie Eyeballs for Halloween

First, gather your ingredients.

You’ll need the typical Rice Krispie Ingredients: butter, mini marshmallows, and rice cereal.

To create the eyeball effect you’ll need rolling fondant in black and white, plus green candy melts and a little coconut oil.

Next, you’ll work on the rice crispy mixture.

Line a baking sheet with wax paper for the Rice Krispie Eyeballs

Line a baking sheet with wax paper and set aside.

In a medium saucepan, melt the butter over medium heat. Then, add the miniature marshmallows and stir until completely melted. Remove the pan from the heat.

Add rice cereal and fold until all ingredients are well combined.

Now roll the rice cereal mixture into small balls, placing each one gently on the lined baking sheet to cool and set.

While the treats are setting up, roll out the black and white fondants with a rolling pin.

Use a Wilton #12 piping tip to cut out 12 circles from each fondant color. You will want the larger end of the piping tip for the white fondant and the smaller end for the black fondant.

To make the eyes, press one black fondant circle onto the center of one white fondant circle. 

Add candy melts and coconut oil to a microwave-safe bowl. Microwave in 30-second intervals, until completely melted (stir between each interval).

Carefully add melted candy into a piping bag and cut a small slit at the end.

Pipe out a circle on each rice cereal treat, about ½ an inch in diameter. Top with one fondant eye.

Allow the treats to set completely before serving them.

Yield: 12 rice cereal treats

Fun and easy Rice Krispie Eyeballs, perfect for Halloween!

Ingredients

  • 2 tbsp butter
  • 2 cups miniature marshmallows
  • 3 cups rice cereal
  • 2 oz. black rolling fondant
  • 3 - 4 oz. white rolling fondant
  • 1 cup green candy melts
  • 1 tsp coconut oil

Instructions

    1. Line a baking sheet with wax paper and set aside.
    2. In a medium saucepan, melt butter over medium heat.
    3. Add miniature marshmallows and stir until completely melted. Remove from heat.
    4. Add rice cereal and fold until all ingredients are well combined.
    5. Roll the rice cereal mixture into small spheres, about 1 ½ - 2 inches in diameter. Place each one gently on the lined baking sheet.
    6. Allow to cool and set, about 30 minutes.
    7. As the rice cereal treats set, roll out each of the fondants separately, with a rolling pin, until they’re about ¼ of an inch thick.
    8. Use a Wilton #12 piping tip to cut out 12 circles from each fondant color. You will want the larger end of the piping tip for the white fondant and the smaller end for the black fondant.
    9. Press one black fondant circle onto the center of one white fondant circle. 
    10. Add candy melts and coconut oil to a microwave-safe bowl. Microwave in 30-second intervals, until completely melted (stir between each interval).
    11. Carefully add melted candy into a piping bag and cut a small slit at the end.
    12. Pipe out a circle on each rice cereal treat, about ½ an inch in diameter. Top with one fondant eye. Allow to set.
