Not only is it super simple to cook, this Chicken Tortilla Soup tastes as good as any I've ever had at a restaurant!

When it comes to cooking for my big family, this recipe is a favorite of everyone – toddler to adult! You won’t believe how quick and easy this Chicken Tortilla Soup recipe is to cook. It’s my go-to for last minute company, or a night when it’s suddenly dinner time before I’ve considered a dinner plan.

Not only is it super simple to cook, this Chicken Tortilla Soup tastes as good as any I’ve ever had at a restaurant!

This recipe uses precooked chicken. While whatever leftover chicken you have on hand will do, this Garlic Lime Marinaded Chicken is the absolute best in this soup. When I make Garlic Lime Chicken, I always grill at least a whole flat to be sure I have leftovers.

If you don’t use the leftover Spicy Lime Chicken in this soup the next day, simply freeze it in one cup portions, perfect for using in this recipe another day.Easy Chicken Tortilla Soup with leftover chicken

If you don’t have any Spicy Lime Chicken on hand, don’t worry. You can easily use just about any leftover chicken, from store-bought rotisserie chicken, to baked chicken breasts, or even roast chicken leftovers.

Once the soup is hot, simply pour it into bowls and serve with a handful of crushed tortilla chips sprinkled on top. You can also have your family’s favorite fixings available to personalize the soup. I usually set out bowls of sour cream, shredded cheese, extra cilantro, avocado slices, and of course heaping bowls of tortilla chips.

Chicken Tortilla Soup

Ingredients

  • 1 lb. shredded cooked chicken
  • 1 c. chopped onion
  • 1 clove minced garlic
  • 1 quart chicken broth
  • 2 cups corn kernels (frozen or canned)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice
  • 1 tablespoon cilantro chopped
  • 1 cup salsa
  • 1/2 cup monkery jack cheese

Instructions

  1. In a large stock pot, bring chicken broth, onion, garlic, and shredded chicken to a simmer.
  2. Add cumin, chili powder, and lime juice.
  3. Add corn and salsa.
  4. Simmer 15 minutes.
  5. Add 1 tablespoon chopped cilantro, and montery jack cheese.
  6. Heat and serve!
