With fall weather moving in, it is too beautiful to get stuck cooking dinner inside- thank goodness for Grilled Garlic Lime Chicken! It’s time to move back to the grill for dinner!

Grilled Garlic Lime Chicken

When I find a flat of chicken breasts on sale, my go to recipe is this delicious Grilled Garlic Lime Chicken. It’s such an easy, no fuss recipe. I simply throw the marinade ingredients together while my kids eat breakfast, add the chicken breasts, then allow the chicken to soak up the deliciousness all day long. By afternoon, the chicken is all ready for grilling. Grilled Garlic Lime Chicken

Grilling can be daunting the first few times. Here are my best tips for cooking this citrusy recipe…

Get the coals hot in the grill- I prefer to use the one-sided method. Piling the coals on one side of the grill to concentrate the heat there. Place the marinated chicken breasts on the coal side, for about 3 minutes per side. You do need to watch out for flare ups when first placing the breasts on the grill, due to the marinade. If a flare up occurs simply move the breast out of the way until the flame dies down. After searing both sides of the chicken, move the breasts over to the side without coals underneath. Cover the grill, and let the chicken cook low and slow. This method not only creates juicy chicken, it also allows for time to get side dishes ready, and the table set.

Grilled Garlic Lime Chicken stands alone thanks to it’s slightly spicy, citrus flavor. I usually serve this recipe with a simple salad to complement it.Grilled Garlic Lime Chicken

For this busy Momma, the best thing about Grilled Garlic Lime Chicken, is how delicious the chicken tastes leftover and  used in other dishes. I love to grill an entire flat of chicken with this marinade. The leftovers are perfect for some of my favorite recipes- Chicken Tortilla Soup, white chicken chili, and chicken spaghetti. If my week is too busy to make an extra dish quickly, I simply freeze the leftovers in one cup portions in freezer zip-top bags.

Grilled Garlic Lime Chicken

Ingredients

  • 2/3 cup oil
  • 3 limes
  • 1 teaspoon grated lime zest
  • 4 cloves garlic
  • 1 tablespoon fresh oregano
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons salt
  • 1/2 black pepper
  • 1 pound of chicken breasts

Instructions

  1. Stir all ingredients, except chicken breasts, together.
  2. Pour marinade into a large zip-top bag.
  3. Add chicken breasts.
  4. Allow chicken to marinate at least 4 hours.
  5. Grill chicken, using your preferred method.
  6. Discard extra marinade.

    Good to know that leftovers taste good. I make a Bach of chicken at one time and repurpose it for lunch or a second dinner. Makes life easier for me.
