The heat of summer has arrived full force in the south.
I love it! That heat promises days full of family splashing in whatever water we can find, evenings by the fire pit, games of tag, inviting friends over, and playing catch.

That extra heat and time together can also be a recipe for sibling bickering. When those tempers flare up on a hot day, I know it’s time for an icy treat to press pause on arguments, and cool little bodies and tempers.Double Chocolate Chip Pound Cake

A favorite summer-time dessert from my childhood is Double Chocolate Pound Cake. The rich chocolate cake is the perfect side to a scoop of ice cream. Last week I found EDY’S® SLOW CHURNED® Caramel Delight Light Ice Cream at Walmart and immediately knew it would be the perfect companion to my Double Chocolate Pound Cake. Ingredients:Double Chocolate Chip Pound Cake

  • 1 box Devil’s Food Cake Mix
  • 1 package (3.5 oz) instant chocolate pudding
  • 4 eggs
  • 1/2 cup oil
  • 1 1/4 cup water
  • 6 oz. mini chocolate chips
  • confectioner’s sugar (optional)

Directions:

Put one box of devil’s food cake mix and one box of instant chocolate pudding in a mixing bowl.Double Chocolate Chip Pound Cake

Pour in 1 1/4 cup water and 1/2 cup oil.Double Chocolate Chip Pound Cake

Mix for about two minutes, or until creamy.Double Chocolate Chip Pound Cake

Fold in 6 oz. mini chocolate chips (or about half a bag).Double Chocolate Chip Pound Cake

Pour batter into a prepared (greased & floured) bundt cake pan.Double Chocolate Chip Pound Cake

Bake at 350 degrees for 1 hour.
