Last week I headed to Kroger to grab all the essentials for a summer evening meal with friends. Living in a small town, my grocery options are limited, so when it comes time to entertain I love to head into the nearest larger town to shop at Kroger. This time I took my big girls with me to choose the essentials for our evening’s meal. We settled on a menu of cojitacornocadoscuit appetizers and spicy garlic lime grilled chicken before going to shop, the rest of the menu was quickly decided by the gorgeous selection in the produce department at Kroger. Kroger selection

While picking up the corn and avocado for our cojitacornocadoscuit appetizers, we also chose ingredients for a fresh salad, plus watermelon for dessert.

Here’s how to make cojitacornocadoscuit appetizers with just 4 ingredients for your backyard entertaining.

Ingredients:

  • TRISCUIT crackers
  • an avacado
  • one ear of corn
  • cojita cheese

Directions:

Grill an ear of corn for the recipe. Of course, this is a great time to grill the rest of your dinner! My children can never get enough grilled corn, so I filled my grill with spicy garlic lime marinated chicken breasts and lots of corn. You can grill the corn with or without the shuck. My Papa always grilled our corn in the shuck, so that is the way I prefer my corn grilled.Grilling
