Some of my favorite childhood memories include playing with my cousins in this same backyard while my Papa and Dad grilled our dinner, and then gathering with the entire family around picnic tables to enjoy a meal together. I love passing that tradition to my own children- except for them it’s Momma they’ll remember at the grill!
Last week I headed to Kroger to grab all the essentials for a summer evening meal with friends. Living in a small town, my grocery options are limited, so when it comes time to entertain I love to head into the nearest larger town to shop at Kroger. You just can’t beat the amazing selection there. (Find your nearest Kroger here.)
This time I took my big girls with me to choose the essentials for our evening’s meal. We settled on a menu of cojitacornocadoscuit appetizers and spicy garlic lime grilled chicken before going to shop, the rest of the menu was quickly decided by the gorgeous selection in the produce department at Kroger.
While picking up the corn and avocado for our cojitacornocadoscuit appetizers, we also chose ingredients for a fresh salad, plus watermelon for dessert.
What’s a cojitacornocadoscuit appetizer? It’s a TRISCUIT cracker topped with cojita cheese, corn and avocado- and it’s delicious! TRISCUIT crackers are “made for more” which makes them the perfect choice for topping!
In the end, we couldn’t pick just one and came home with three different boxes! Since TRISCUIT crackers are perfect for summer, I knew the extra crackers wouldn’t go to waste. I can’t wait to try more grilled toppings on those extra TRISCUIT crackers!
Here’s how to make cojitacornocadoscuit appetizers with just 4 ingredients for your backyard entertaining.
- TRISCUIT crackers
- an avacado
- one ear of corn
- cojita cheese
Grill an ear of corn for the recipe. Of course, this is a great time to grill the rest of your dinner! My children can never get enough grilled corn, so I filled my grill with spicy garlic lime marinated chicken breasts and lots of corn. You can grill the corn with or without the shuck. My Papa always grilled our corn in the shuck, so that is the way I prefer my corn grilled.
That’s it! Your cojitacornocadoscuit appetizers are ready to enjoy! How do you top your TRISCUIT crackers? Whether served as a snack, appetizer, or as a meal they are a great choice for either savory or sweet ingredients.
