When my youngest son was born, I had no idea what was coming. After 5 pretty content and easy newborns, I was unprepared for how hard it would be when he cried unconsolably for long periods of time. I felt like I was drowning in his cries, especially when I also worried I was failing the rest of my family. Finally figuring out that he couldn’t tolerate dairy in my diet, and immediately giving up dairy cold-turkey changed his entire personality. Finally I had a content baby. I’ll never forget the first time I got to sit still for half an hour with a happy baby in my arms – it was amazing after the constant motion and crying of the previous month.
I panicked about giving up dairy, since I love milk and cheese!. However, with the help of friends (and google) I slowly found good substitutes for dairy, as well as dairy-free meal solutions I enjoyed. Breakfast is always one of the most difficult meals of the day- even before going dairy free. When you are a mom, mornings are busy! Between children rising earlier than I would like, getting the kids breakfast, morning chores, getting everyone dressed, I find it hard to remember to grab breakfast for myself in the rush. Grabbing dairy-free breakfast was even harder!
So, today I’m sharing 4 quick and easy, dairy-free breakfasts for busy mornings. Any one of the following items alone make a great breakfast. If you want a really hearty, filling breakfast add a hard-boiled egg and you’ll have energy to last for the busiest of mornings! Boil several eggs and store them in the refrigerator for the week for a truly grab and go breakfast!
Yogurt and Mix-Ins
Wait, yogurt is dairy, right? Well, Silk offers a Dairy-Free Yogurt Alternative that is really delicious! Giving up my go-to breakfast of yogurt was my first concern when I went dairy-free. Thanks to Silk, I didn’t have to give it up!
Keep several containers of Silk Dairy-Free Yogurt in the refrigerator with several mix-in options for a quick and easy breakfast!
My favorite mix-ins:
- granola
- frozen berries
- diced apple and cinnamon
- diced peaches and honey
- maple syrup and almonds
- strawberries and chocolate chips
Make Ahead Oatmeal
In a pint-sized Mason jar stir together 1/2 cup of oats, a container of Silk, and 1/2 a cup of non-dairy milk (soy, almond, rice, or coconut). Then add a handful of your favorite toppings- diced peaches or berries are my favorites. Close the jar and store in the refrigerator until breakfast. They stay yummy for several days, so you can even make a few at the time!
Smoothie
Blend a container of Silk, 1/2 a cup of non-dairy milk, 1/2 a banana and 1/2 a cup of frozen fruit for a yummy breakfast smoothie.
Fruit Salad
Mix a container of vanilla Silk and 1/4 a cup of peanut butter. Stir the mixture into a bowl containing a diced apple and banana. Yummy!
Going dairy-free in order to breastfeed this little one was not easy- but it was so worth it!
