Feeding my family is something I take pride in. I love the accomplishment of cooking and serving a delicious meal. However, as a busy mom, I need those meals to be quick and easy. Now that I’ve learned to use my charcoal grill, I also love cooking those meals out on the porch to keep the mess and heat outside.

Peppercorn Cilantro Southwest Salad

With summer arriving and my children spending most evenings outside playing, it’s nice to grill out and be part of the action rather than stuck alone in the kitchen preparing dinner. I often serve those grilled meals right outside on our picnic table. No mess in the kitchen to clean up at all! And no dirty children at my kitchen table. Instead we play hard until dark, and then the kids go straight from outside play to bath and bed!Peppercorn Cilantro Southwest Salad

This week I made a delicious Peppercorn Cilantro Southwest Salad for dinner using Smithfield Peppercorn Garlic Tenderloin.

Ingredients:Peppercorn Cilantro Southwest Salad Peppercorn Cilantro Southwest Salad

  • Smithfield Peppercorn Garlic Tenderloin
  • 2 whole ears of corn
  • 1 cup cilantro
  • 1/2 cup sour cream
  • dash of salt
  • 2 limes
  • 1/4 cup olive oil
  • your favorite salad ingredients- lettuce, colorful peppers, red onion, avocado, etc

Directions:

Simply cook the Smithfield Peppercorn Garlic Tenderloin and several ears of corn on your charcoal grill. Then assemble the salad and dressing while the grill does the hard work.Peppercorn Cilantro Southwest Salad

For the Cilantro Lime Dressing grab a food processor or blender, dump in the following ingredients and blend together.

First add 1 cup cilantro- leaves and stems are fine. Just rinse the cilantro, rip a big handful off the bunch, and toss it in the blender.Peppercorn Cilantro Southwest Salad

Add 1/2 cup sour cream and a dash of salt.Peppercorn Cilantro Southwest Salad

Squeeze approximately 2 tablespoons of fresh lime juice into the blender. I used two small limes in my dressing.Peppercorn Cilantro Southwest Salad

Add 1/4 a cup of olive oil. Now, blend or process the dressing.

Fill a large bowl with lettuce, onion, and colorful peppers. Slice the kernels off several ears of grilled corn, and top the salad with the corn. Finish with several slices of avocado.

Top with the Cilantro Lime salad dressing and serve Smithfield Peppercorn Garlic Tenderloin sliced in medallions on the side, or chopped on top of the salad.Peppercorn Cilantro Southwest Salad

  1. This looks like a delicious summer time meal! I love using the grill when it’s warmer our and we do love pork tenderloin! Your salad looks great too…avocado is one of my favorite foods!

  2. I have a pork tenderloin in my freezer. I think I need to take it out and grab some fresh corn too.
