How to Make Pot of Gold Truffles

Ingredients

  • oreos
  • softened cream cheese
  • chocolate almond bark, chocolate melting wafers, or chocolate chips
  • Airhead extreme strips or bite-sized candies
  • Gold confetti sprinkles

Instructions:

Line baking sheet with parchment paper.

Crush oreos until fine ccrumbs using a food processor, or other preferred meathod.

In a medium bowl, combine crushed oreos, and softened cream cheese together until fully incorporated. 

Scoop oreo mix into 1 1/2 tbs balls and chill for about 30 minutes. 

Using a toothpick and your fingers, try to shape the balls into pots.

Press in the toothpick around the top – about 1/8-1/4” to create the top of the pot.

Push the top up if you can and flatten the top surface. It won’t be perfect, and that’s okay!

Chill the shaped balls for 15 to 30 minutes to make dipping easier.

Place the almond bark into a small microwave safe bowl. Microwave for 30 second intervals, stirring between each session until it is fully melted. 

Drop the little oreo pots into the chocolate, and use a spoon to make sure the truffles are fully covered in chocolate, and then lift out and onto the parchment paper. 

Let the truffles set for about a minute, but make sure they don’t set all the way. Drop the confetti sprinkles onto the flat surface of the pot.

*If you put the sprinkles on right away, they may just slide right off.

Place the airhead into the chocolate and hold in place for a few seconds to make sure it is secure. If you use the strips you can fold it back so that it doesn’t flop over. 

Allow them to set fully.

Once they are fully set, you can use a sharp knife to trim the excess chocolate off the bottoms and clean the pot of gold up.

Keep the truffles refrigerated in an air-tight container  until just before serving. 

Yield: 18 truffles

Notes

Keep the truffles refrigerated in an air-tight container until just before serving. If the chocolate starts to get white spots, run a hairdryer over then on a low setting for a few seconds and they will disappear very quickly.
