How to make Mini Mermaid Cakes

To make these adorable Mini Mermaid Cakes first gather your ingredients.

Preheat the oven to 350 degrees. Line a 9×13 rectangular baking sheet with parchment and set the baking sheet aside.

In a small bowl, shift the flour, baking powder and salt together.

In a larger bowl, beat together the eggs, sugar, vanilla and canola oil

Slowly add the dry ingredients to the wet ingredients, alternating with the milk.

Once the batter is well mixed, add purple gel food coloring until you read the desired shade of purple.

Pour the batter into the baking sheet, smoothing it out with a spatula.

Bake the cake batter for 15 – 20 minutes.

Allow the cake to cool, then cut it in 12 circles using a 3 inch, round cookie cutter.

Next, decorate the mini mermaid cakes. Make the buttercream icing by beating the butter, confectioners sugar, and milk.

Add blue food coloring until you reach the desired shade of blue.

Scoop 2/3 of the buttercream icing into a piping bag, and frost 6 of the circular mini cakes.

Next, add an unfrosted mini cake onto to make a miniature layered cake.

Using a spatula, frost the top of each of the cakes.

Add brown sugar as “sand” on top of each cake.

Next, make the seashells with a seashell mold and the fondant.

To make the perfect fondant seashell, take a small piece of fondant, and press it evenly into the seashell mold. Pop the fondant seashell out of the mold and place two seashells on top of each cake.

Mini Mermaid Cakes

Delicious and adorable mini mermaid cakes perfect for a mermaid themed birthday party.

Ingredients

  • For the cake
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • Pinch of salt
  • 2 large eggs
  • 2/3 cup sugar
  • 1 tsp vanilla
  • ½ cup canola oil
  • 2/3 cup milk
  • ¼ tsp purple gel food coloring
  • To decorate
  • 1 stick butter, softened
  • 2 cups icing sugar
  • 2-3 tbsp milk
  • ¼ tsp sky blue gel food coloring
  • 1 tbsp brown sugar
  • 2-3 oz. purple fondant
  • 2-3 oz. green fondant

Instructions

    To make the cake:
    Line a rectangular baking sheet with parchment paper and set aside. Preheat oven to 350 degrees F.

    In a small bowl, sift together flour, baking powder and salt.

    In a larger bowl, using an electric mixer, beat eggs, sugar, vanilla and canola oil.

    In thirds, slowly add dry ingredients into large bowl of wet ingredients, alternating with the milk.

    Once batter is formed, add purple gel food coloring and mix until completely tinted.

    Pour batter onto lined baking sheet and even it out with a spatula.

    Bake for about 15-20 minutes.

    Allow to cool and once cooled, cut out 12 circles using your cookie cutter.

    To decorate:
    Make buttercream by mixing together butter, icing sugar and milk.

    Once buttercream starts to take form (creamy and forms semi-stiff peaks), add blue food coloring. Mix until tinted.

    Scoop 2/3 of your buttercream into a piping bag and frost 6 of your circular mini cakes. Add an unfrosted circular mini cake on top.

    Using an offset spatula, frost the top of each cake.

    Add brown sugar to act as “sand” on top of each cake.

    Using your fondant mold, create seashells with your fondant. To achieve a perfect seashell mold, take a small portion of fondant and press it evenly into your desired shape. Pop out and place 2 on top of each cake.
