These pumpkin energy bites are a great way to enjoy the flavors of fall with a healthy and delicious snack.

These no bake pumpkin energy balls are quick and easy to make. You’ll enjoy eating them all fall long!

Pumpkin treats are my favorite fall food, but I have to admit that before this recipe most of my favorite pumpkin foods were solidly in the dessert category.

I love that I can now enjoy a pumpkin flavored treat that is also good for me!

How to make Pumpkin Energy Balls

Ingredients:

  • peanut butter
  • pumpkin puree
  • honey
  • rolled oats
  • mini chocolate chips
  • ground flax seed
  • cinnamon
  • nutmeg

Directions:

Mix together peanut butter, pumpkin puree and honey until well combined.

In a separate bowl, mix the dry ingredients- rolled oats, flax seed, cinnamon, and nutmeg.

Mix the wet and dry ingredients together, then add in the mini chocolate chips.

Roll energy bites in spheres about 2 inches in diameter.

Place each bite gently on a pan and refrigerate for at least one hour before serving. Enjoy!

Yield: 12-15 bites

Pumpkin Energy Balls

Delicious and healthy fall treat that tastes like pumpkin pie!

Ingredients

  • ½ cup peanut butter
  • ½ cup pumpkin puree
  • 1/3 cup honey
  • 1 ½ cup large rolled oats
  • ½ cup mini chocolate chips
  • ½ cup ground flax seed
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

Instructions

    In a medium sized bowl, mix together peanut butter, pumpkin puree and honey until well combined.

    Add remaining ingredients (ie.: the dry ingredients) into the pumpkin mixture, folding to make sure everything is well incorporated.

    Form the energy bites from the pumpkin mixture by rolling them out in spheres about 2 inches in diameter.

    Place each bite gently on a pan and refrigerate for at least one hour before serving. Enjoy!
